WINEMAKING
The quality of the grapes determines the quality of the wine more than any other factor. At Alpha Zeta, we work closely with growers to ensure the grapes are fully ripe by reducing yields and picking later.
While working with traditional Veronese grape varieties, we have introduced a number of modern winemaking techniques to capture the fruit character and freshness in the wine. Matt has introduced must-chillers into the winery to ensure that the grape must is kept cool prior to fermentation to preserve the flavours. And the introduction of lower temperature fermentation reduces the loss of perfume and preserves the character of the grapes in the wine.
For the Alpha Zeta reds, Matt has worked hard with Lorenzo and Luca to manage the tannins in the wine and retain softness.
